Tasty Bavarian Saddle Of Lamb (Lammrücken)

Ingredients:

  • 800g / scant 2lb saddle of lamb, skin removed
  • Salt
  • 3 tbsp sunflower oil
  • 2 tbsp olive oil
  • 50g / scant 1/4 cup butter
  • 1 clove of garlic
  • Rosemary, thyme, savory, lavender (to taste)
  • Pepper

Let’s create something tasty:

  1. Wash the saddle of lamb, pat dry with a paper towel, and salt on all sides. Preheat oven to 80C / 175F. Heat the sunflower oil in a oven proof pan, and sear the saddle of lamb at moderate heat on all sides. Put the pan with the seared meat on the middle rack of the preheated oven, and let the meat rest for 5-8 minutes.
  2. In the meantime, heat the butter and olive oil in a second pan, add the saddle of lamb, and sear all sides again for 3-4 minutes until crisp. Add a peeled clove lavender to taste. Salt and pepper the saddle of lamb, and serve with the olive oil-butter-herb mixture.

Our recommendation as a side dish would be either potatoes.
